Maybe the atmosphere on every planet in Dream Land is primarily composed of helium, and its flora and fauna are adapted to breathe it so it doesn't kill them or turn their voices squeaky (assuming they weren't already)? I mean, there's been scientifically grounded speculation about alien life forms that could potentially use arsenic the same way our bodies use carbon. If my helium theory was indeed the case, there shouldn't be any reason that an inflatable puffball like Kirby couldn't fly, since Smash Bros. has clearly demonstrated how light he really is. We also know that he can fill himself with incredible amounts of gases, enough to turn into a balloon big enough to pick up Dedede's castle.
Of course, this begs the question of where his internal organs would go...and none of this explains how he'd actually steer himself in the air while staying inflated. Unless it's with farts.
